My uncle used to be a taquero back in edomex (estado de mex). He’s a mechanic now but he does occasionally host taquizas for holidays or parties. He specializes in cabeza and lengua. The process involves a bunch of herbs and seasonings and then wrapping the meat in pencas de maguey (agave leaves) after they are cooked under a flame to make them flexible. Afterwards, he digs a hole on the ground and we put the giant pot with the closed top and the agave covered meat inside. Several hours later, the pot is opened and then he preps his set to serve people. Best tacos of my life and we make salsa with chile manzano(apple pepper). AMAZING

Btw for those of you that are sqeemish about the skull, the VAST majority of places that offer this won’t even have the bones. Just the actual cuts of meat which are then orepared the way you would other cuts of beef. And trust me…. it’s DEVINE
