Thinking Skeptically :
You can’t just put meat in a cooler with 130 degree water and leave it because the water won’t stay at 130 degrees. You need an immersion circulator to keep the water at the right temp for sous vide cooking.

"Seals the juices" was never the theory. It was about the maillard reactions that add flavor.

as a joke, I tried putting the meat inside a ziplock and putting it in the dishwasher. It worked. I am going to try my washing machine next.

the texture is always off with sous vide. I used it a lot when my kid was a baby because of the convenience. Doesn't taste as good as putting it on a grill

Food seal, keep in freezer until ready, put in sous vide at 130 degrees for 1 hr, remove from food grade bag, sear on high in buttered pan for 3-5 mins, let sit a few minutes then … RESTUARANT QUALITY STEAK!

This clip is missing key info. Is he saying that putting a steak in a bag in 130 degree water will retain 100% of the juices?
