@thebigleybasics: High-Protein Chocolate Chip Cookie Dough Bars! They’re gluten-free, dairy-free, and refined-sugar-free, and can even be made sugar-free. With just 6 simple ingredients, these are one of my favorite healthier no-bake treats! Protein Cookie Dough •1/2 cup cashew butter (or other nut/seed butter) •1/3 cup coconut oil, melted •1/2 tsp salt •1 cup almond flour •1 cup plant based vanilla protein powder (I used Truvani) •1/2 cup dark, semi-sweet, or unsweetened chocolate chips Chocolate Ganache •6 oz dark, semi-sweet, or unsweetened chocolate •3 Tbsp hot/boiling water •Flaky sea salt Instructions 1. Make the cookie dough: Mix the cashew butter, melted coconut oil, and salt until smooth. Stir in the almond flour, protein powder, and chocolate chips until a thick dough forms. 2. Press the dough into a parchment-lined loaf pan and smooth the top. 3. Make the ganache: Add hot water to the chocolate and stir until smooth. If needed, gently heat in the microwave or over a double boiler until fully melted. 4. Pour the ganache over the cookie dough and smooth it out. Sprinkle with flaky sea salt. 5. Refrigerate for several hours, until fully set. 6. Once set, remove from the fridge and let soften for 15 minutes then slice and serve!
