Demographics of Chinese in America have changed. Immigrants used to come mostly from Hong Kong and Taiwan before the 1980's. After 1980, most Chinese from PRC which brought Szechuan, Hunan and Northern Chinese cuisine to American restaurants.

so it's a good thing. they came over here that work 12 hours a day making people happy and content and selling food at a reasonable price and put their kids through medical school and law School and their kids became doctors and lawyers and they retired happy

A similar thing has happened in the UK with the number of Chinese restaurants halving. There's no equivalent big chain like Panda Express but the last 20-odd years has seen a rise in regional Chinese cuisine. Like he said, the children of restaurateurs/takeaway owners don't fancy entering a tough business with long hours. What's more, competition is fiercer nowadays. Back in the 80s, a takeaway was Chinese or Indian whereas now there's a plethora of options

My friends own a Chinese restaurant. They are now in their late 70s and pretty much over it. Their kids are electricians and in IT. It’s sad, but also good.
