Frozen French fries don't actually have preservatives except a miniscule amount of a color retention agent that is basically salt with an extra few atoms. That's why they have to be frozen. It's fine to make your own fries. But frozen fries are preserved by freezing.

I have 2 of these. 1 in the house and 1 out in my shop.. use them both alot. we eat alot of fries. I also make fries for party's and our family get togethers
