Perfect-Consistency Semolina Halva Flour & Semolina Halva Ingredients: 1½ cups semolina ½ cup all-purpose flour 2 heaping tablespoons butter (about 100 g) ½ cup vegetable oil For the Syrup: 1 cup + 1 cup minus 1 finger granulated sugar 4 cups water (If you like it sweeter, you can use a full 2 cups of sugar.) Instructions: Add the sugar and water to a suitable saucepan. Place it on the stove and once the sugar dissolves and the water starts to boil, turn off the heat immediately. In another pot, add the butter and vegetable oil. Add the semolina and roast over low heat, stirring constantly. Do not leave it unattended at this stage, as semolina can burn very quickly. Roast until it reaches your desired color (this took me about 9–10 minutes, but it may take less). Add the flour and continue roasting for another 3–4 minutes. Turn off the heat before adding the syrup to prevent splashing. Carefully pour in the syrup (I added it in two batches) and stir well. Turn the heat back to low and stir until the mixture becomes smooth. Cover the pot and let it absorb the liquid, stirring once or twice in between. It usually absorbs the syrup in about 4–5 minutes, but this may vary. Once the syrup is fully absorbed, keep the lid closed and let it rest for about 10 minutes before serving. You can garnish with pistachios, walnuts, or hazelnuts. Sprinkling cinnamon adds a wonderful aroma. Drizzling 1–2 teaspoons of tahini on top is also delicious. Or you can enjoy it plain — all options are wonderful and completely up to you.
