Maybe the key is a shallow pan? I think in the US we (at least I have been) using a big pot like you would make soup in - maybe the key is shallow??

I inherited an antique egg poacher. I didn't even think to do it this way. I could get rid of it and have one less thing to hoard away. May ask my sister if she wants it. I only use it a handful of times a year

I use a chopstick to swirl the whites around & over each egg. I do this immediately after dropping each egg. It turns each egg into a neat package with no flyaway tendrils...it makes for great presentation on the plate.
