@evan.gallimore: Reverse Sear Steak (Medium-Rare) 🥩🔥 Start with a thick cut ribeye or New York strip (1¼–1½ inch). Season generously with salt & pepper. Oven at 275° until internal temp hits 110-115°. Screaming hot cast iron → render the fat cap first. Sear until golden brown, flip, lower heat to medium, then add rosemary, thyme, garlic & butter. Baste. Pull 5-10° before target temp (130-135°) and let it rest. Perfect medium-rare every time.
What I experienced with reverse sear is a fully even steak at whatever your desired doneness is. And then 2 minutes ONLY ON EACH SIDE
