Shopping list👇 300g organic silken tofu pack of oranges squeezy honey 180g m&s chocolate 2x 750g packs of chicken wings piri piri marinade piri piri dry seasoning frozen peas and sweetcorn  500g easy cook dry rice jar of chickpeas jar of butter beans lighter halloumi 1kg mini roster potatoes 1 garlic bulb 1 red pepper bag of rocket CHOCOLATE ORANGE MOUSSE Macros: 229 cals / 6.4g p / 11g f / 25g c Ingredients: 100g chocolate melted  300g silken tofu 1/2 orange squeezed orange zest 2tbsp honey Garnish: grate some of the remaining chocolate and orange zest after the mousse has set. METHOD:  Melted the chocolate either in the microwave gradually or over a pan of hot water. Drain the water from the tofu box before adding to a blender along with the honey, orange zest, orange juice and melted chocolate. Blend until fully combined then separate into 4 equal servings. Cover and place in the fridge for around 1.5 hours. To garnish, grate extra orange zest and chocolate! PIRI CHICKEN WINGS & RICE Macros: 491 cals / 28g p / 19g f / 49g c (for 3 wings and the rice) Ingredients: 1.5kg chicken wings 2 heaped tbsp piri seasoning  salt & pepper 100ml piri marinade 200g dry easy cook long grain rice 1 cup of frozen sweetcorn and peas 1tsp piri seasoning and a pinch of salt (in the water to cook the rice) 1/2tsp turmeric powder (optional but this is what gives the rice the lovely yellow colour) METHOD: Season the chicken wings with piri seasoning, salt and pepper. Pour over the marinade and leave in the fridge for 1hour minimum. Air fry or oven cook the chicken wings until cooked through, turning half way. I did 20 minutes at 180 in the air fryer. Wash and drain the rice thoroughly before adding into seasoned (priri seasoning, salt and turmeric) boiling water. Turn the heat to simmer, cover with a pan lid and cook for around 20 minutes or so making sure to mix every 5. 10 minutes before the rice is finished, add the frozen veggies, mix and cover for the remaining time. I separated the rice into 4 equal servings and added 3 chicken wings then placed the remaining chicken wings in a meal prep container to eat as snacks.  HOT HONEY HALLOUMI SMASHED POTATOES Macros: 638 cals / 31g p / 19g f / 91g c Ingredients: 1kg mini roster potatoes 2 garlic cloves 2tbsp olive oil salt & pepper 1 red pepper 20g piri marinade 1 jar of chickpeas drained 1tbsp piri seasoning 1 jar of butter beans drained rocket 1 block of lighter halloumi 1 heaped tbsp of squeezy honey 1tsp chilli flakes METHOD: Parboil the potatoes in salted water for around 10 minutes or so, until fork tender but they dont fall apart. Drain then add to an oven dish. Smash each potato gently with the back of a glass or something flat, drizzle with oil, season with salt and pepper. Add 2 garlic cloves to the oven dish to roast for the butter bean dip. Roast in a preheated oven for around 50 minutes at 200 until golden and crispy. Turn the potatoes over half way through and remove the garlic cloves after 25 minutes. Slice the red pepper and brush with piri marinade, air fry for around 15 mins at 180. Drain the chickpeas, drizzle with oil and season with piri seasoning before roasting for 10 minutes at 200. To a blender add, drained butter beans, the roasted red pepper, the 2 roasted peeled garlic cloves, and a drizzle of oil. Season with salt, pepper, and add a splash of water to loosen it before blending until smooth. Pan fry sliced halloumi in honey and chilli flakes for a few minutes per side until golden.
