You can achieve the same by adding a small pot of water inside the oven. You don’t have to wet the bread.

You need to infuse water with herbs ( dried or fresh doesn't matter) then splash the water generously on the bread before microwaving. Rosemary, thyme, garlic, scallions , Italian mixed herbs etc work great as an infusion.
