A healthy, balanced grilled chicken and quinoa salad with fresh vegetables, inspired by Mediterranean flavors. Ingredients: - 1 cup uncooked quinoa - 2 cups water - 2 boneless skinless chicken breasts - 1 tablespoon olive oil - 1 teaspoon garlic powder - 1 teaspoon paprika - 1/2 teaspoon black pepper - 1/4 teaspoon salt (reduced amount for sodium control) - 1 cup cherry tomatoes, halved - 1 cucumber, diced - 1/4 cup chopped fresh cilantro - Juice of 1 lemon - 2 tablespoons olive oil (for dressing) - Mixed greens (optional) - Salt and pepper to taste Instructions: 1. Rinse the quinoa under cold water. In a pot, bring 2 cups water to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Let cool. 2. Preheat the grill to medium-high. In a small bowl, mix olive oil, garlic powder, paprika, black pepper, and salt. Brush the chicken breasts with the spice mixture. 3. Grill chicken for 6-7 minutes per side until cooked through. Remove from grill and let rest for a few minutes, then slice. 4. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, cilantro, and lemon juice. Drizzle with 2 tablespoons olive oil, season with salt and pepper to taste, and toss. 5.
