What I would recommend is finding someone who has active starter they are willing to share with you. After you get comfortable with feeding the active one and seeing what it’s supposed to look like make your own.

Get a dehydrated starter or get some from a friend, I made my own starter the first time around and it took me a month and a half. There’s honestly no difference

Patience is key! I have always done 1:1:1 ratio to feed my starter. Coming up on a year now. Mine took about 2 weeks to be ready to bake with. You will get a false rise in a few days after starting, but it is not ready yet! Consistency should not be runny, it should slowly plop off whatever you’re stirring with and there should be a peak! You want less water than flour. Thick and not super pourable. Solid lid on top instead of a paper towel, because the paper towel is porous. If you invest in a kitchen scale, it will make your starter maintenance easier and more accurate.

So I’m only on day 3 so what I’m about to say is only what I’ve found from research lmao 😅🤣 so don’t use the paper towel. Use just the ring that’s missing out of your lid and set it on top. Also, it should be thicker. Feed it around the same time every day and just make sure you’re putting at least as much flower as you have starter (so before you feed you’re gonna wanna dump out most of your starter)

If you have a local sourdough baker look into purchasing an already active starter. That’s what I did; Mine was $10 bucks saved me the time of trial and error of getting the right rise and fermentation. If you don’t have a local baker I can’t help with the making the starter too much other then, feed more flour then water, you want her THICK just enough water to get her mixed. Once she’s active tho dm me id be happy to answer bake questions!
