Mix cucumber slices with soy, sesame oil, rice vinegar, honey, gochugaru. Let sit 10–15 min (or longer) 7️⃣ Shred Beef
Shred roast with forks.  8️⃣ Reduce Sauce (Optional but 🔥)
Scoop 1–2 cups cooking liquid → simmer 5–8 min until glossy. Skim excess oil. Pour back into beef. Let soak 10–15 min. 9️⃣ Build Bowls
