@lucymakes_: Fresh mint hot chocolate w/ a salted maple bow marshmallow + fresh whipped cream <3 recipe below! And I’ll post the marshmallow recipe later this week:) Serves 2 -1/4 cup cocoa powder -1/3 cup dark chocolate chips or chopped dark chocolate -1 TBSP maple syrup, or more to taste -3 cups whole milk -2 heaping cups fresh mint leaves -pinch of salt For the whipped cream: I never measure for whipped cream— just pour a little bit of cold heavy whipping cream into a large bowl or a tall cup (if making a single serving), along with a small splash of maple syrup or sugar. For this I like to just barelyyy sweeten the whipped cream but totally up to you. Whisk with an electric hand mixer or strong milk frother until medium-stiff peaks form. Instructions: 1. Dump all ingredients into a medium sized pot. Place over medium low heat & whisk together as you bring the mixture to a simmer. I usually start at medium heat so the cold milk can heat up quickly, but once it gets hot I turn the heat down to low or medium low. At first the cocoa powder will not mix in, but once everything gets warm it will start to dissolve and eventually be nice and smooth. 2. Lightly simmer everything together while whisking for about 25 minutes. We want to be careful not to let the mixture come to a full boil as that might end up separating or curdling the milk. If that does happen, you can usually save it by blending it together or using a milk frother to blend so it comes back together. But it’s best to avoid all together so keep an eye on it & whisk consistently. 3. At this time I like the make a whipped cream while standing next to the hot chocolate pot to keep an eye on it. 4. Strain hot chocolate before serving (or just scoop out the mint leaves). Give it a taste, add more syrup or salt if you’d like. Enjoy!! 5. Note: if you’d like it more thick, add 1 tsp of cornstarch to a tiny bit of cold milk, mix to dissolve and then add to the hot chocolate while whisking. If you’d like you can start by adding half the cornstarch slurry into the hot chocolate and then see how thick it gets after cooking, then add the rest if you want. Continue to cook for a few minutes until thickened. #EasyRecipes #hotchocolate #peppermint #madefromscratch #relaxingbaking
