🔥 THERE’S NOTHING WORSE THAN HEARING THAT CRACK WHEN YOU’RE CANNING! 🫙💥 One minute you’re feeling like a homesteading pro… and the next you’re staring at a cracked jar and tomato sauce all over the counter. 😭 The good news? Most jar breakage from thermal shock is preventable! Here are my biggest tips for keeping those jars intact: 🫙 Keep jars hot — If you’re hot-packing food, your jars should be hot too. Never put hot food into a cold jar. 💧 Match temperatures — Don’t take a scorching-hot jar and put it into ice-cold water. Likewise, don’t put a cold jar into boiling water. 🔥 Preheat your jars — Keep empty jars in simmering water until you’re ready to fill them. 🥫 Use a hot water bath for hot-packed food — Your canner water should be hot when the filled jars go in, rather than shocking them with a huge temperature difference. 🧺 Use a jar rack — Never place jars directly on the bottom of the pot. The rack keeps them from sitting directly against the hottest surface and allows water to circulate. 🚫 Don’t put hot jars on a cold countertop — Set them on a towel, wooden surface, or cooling rack when they come out of the canner. ❄️ Don’t rush the cooling process — Keep jars away from cold drafts, air conditioners and fans. Let them cool naturally. 💦 Don’t dump cold water into a hot canner — If you need to add water during processing, use hot water so you don’t drastically drop the temperature. 🔍 Inspect your jars — Before every use, check for chips, cracks or tiny imperfections, especially around the rim. If a jar is damaged, don’t use it for canning. And here’s one people sometimes forget: Don’t overtighten your bands. Finger-tight is all you need. The lid needs to allow air to escape during processing. 🍅 SIMPLE HOME-CANNED TOMATO SAUCE For a basic tomato sauce, start with tested canning directions rather than improvising the acidity or processing time. A simple sauce can be made with: • Ripe tomatoes • Optional onion, garlic or herbs • 1 tablespoon Bottled lemon juice per pint Cook your tomatoes down to your desired consistency, ladle the hot sauce into hot prepared jars, leaving the headspace specified by your tested recipe. Remove air bubbles, wipe the rims, apply lids and bands finger-tight, and process in a boiling-water canner for the time specified by the tested recipe for your jar size, altitude and preparation method. ⚠️ Important: Don’t add extra low-acid vegetables, meat, oil or change the acidity/processing time just because you’ve always done it that way. Tomato varieties vary in acidity, so use a current tested recipe for safe processing.
