@bikinibitesbyk: 1 year difference…same outfit & a thicker meal idea 🤤 SHORT RIB BAKED POTATO Ingredients For the Short Ribs: • 2 ½ lbs beef short ribs (bone-in) • @Loisa Sofrito • 1 tsp: black pepper, garlic powder, onion powder, paprika// 1/2 tsp: cumin & salt (for short rib rub) • 2 tbsp olive oil • 2 carrots, diced •1 onion, diced • 6 garlic cloves, minced • 2 tbsp tomato paste • 1 cup red wine • 3 cups beef stock • 2 sprigs fresh thyme • 2 sprigs fresh rosemary • 2 bay leaves • Salt & black pepper to taste (plus extra seasonings as needed) For the Potatoes: • 4 large russet potatoes • Olive oil (to rub skins) • Sea salt (for skins) For Garnish: • 1 cup shredded cheddar • ½ cup sour cream • 2 green onions, thinly sliced • Crispy fried onions or shallots (optional) • red onion, chopped • Fresh parsley, chopped METHOD 1. BRAISE THE SHORT RIBS 1. Preheat oven to 325°F (163°C). 2. Season short ribs generously with seasonings 3. Heat olive oil in a Dutch oven, sear ribs on all sides until browned. Remove and set aside. 4. In the same pot, sauté onion, carrots, and garlic until softened. Stir in tomato paste. 5. Deglaze with red wine, scraping the bottom. Reduce slightly. 6. Add beef stock, thyme, rosemary, and bay leaves. Return ribs to pot. 7. Cover and braise in oven 3-4 hours, until meat is tender and falls off bone. 8. Remove ribs, shred meat, discard bones & excess fat. Strain and reduce braising liquid into a glossy sauce. Toss shredded beef in some of the sauce. 2. BAKE THE POTATOES (start this when meat is half way done) 1. Scrub russet potatoes clean, prick with fork. Rub with olive oil and sprinkle with sea salt. 2. Bake at 400°F (204°C) for 50–60 min, until skins are crispy and insides fluffy. 3. BUILD THE LOADED POTATO 1. Split open hot potatoes, fluff insides with fork. 2. Layer in cheese so it melts into the potato. 3. Pile on short rib meat generously. 4. Drizzle with reduced braising sauce. 5. Finish with sour cream, green onions, crispy onions, red onion and parsley. #shortribs #potato #bakedpotato #loadedbakedpotato #cookwithme
