Crispy Siu Yuk (Chinese Roast Pork Belly) 🐷 Crispy, blistered crackling with juicy five-spice pork underneath. I use @Cornish Sea Salt Co Sea Salt Crystals to season the pork and create the salt crust for that signature crispy skin. Ingredients 800g boneless, skin-on pork belly Marinade  1 tsp Cornish Sea Salt Crystals  1½ tsp caster sugar  ½ tsp Chinese five-spice  ½ tsp garlic powder  ¼ tsp white pepper  ½ tbsp Shaoxing wine For the skin  1 tsp unseasoned rice vinegar  ¼ tsp baking soda  100–150g Cornish Sea Salt Crystals, or enough to completely cover Method Place the pork skin-side down in shallow boiling water for 2 minutes, keeping the meat above the water. Remove and pat thoroughly dry. Rub the marinade over the meat and sides, keeping the skin clean. Prick the skin all over. I tied 7 metal skewers together to make a simple skin pricker, but a pork-skin pricker or sharp toothpick works too. Place skin-side up on a wire rack over a tray and refrigerate uncovered for 12–24 hours. Pat the skin dry again and gently blot any moisture from the meat without removing the marinade. Heat oven to 160°C fan. Wrap the meat and sides snugly in foil, leaving the skin exposed and level. Mix the vinegar and baking soda and brush over the skin, then completely cover with Cornish Sea Salt Crystals. Roast for 50–60 minutes. Remove the salt crust and brush away any remaining salt, keeping the foil around the meat and sides. Increase oven to 240°C fan and roast for 15–25 minutes, until the skin is puffed, blistered and crisp.
