Creamy chicken & broccoli pasta, yes or yes? Ingredients (for 2 servings): Chicken – 250-300 g Spices (chilli flakes, black pepper, paprika, salt, dried oregano, garlic powder, cumin) – 1 tsp each Onion – 1/2 pc Sun-dried tomatoes – 1/2 cup Broccoli – 80-100 g Olive oil – 1 tbsp Garlic – 1–2 cloves Heavy cream – 180 ml Parmesan, grated – 2 tbsp (+ extra for serving) Mozzarella, grated – 1 tbsp Pasta – 180 g Salt – to taste Black pepper – to taste Fresh parsley – 1 handful Instructions: 1. Cut the chicken into small cubes. Add the spices and mix thoroughly until evenly coated. 2. Dice the onion. Mince the garlic. Chop the sun-dried tomatoes into small pieces. Cut the broccoli head into small, bite-sized florets suitable for pasta. 3. Heat olive oil in a pan over medium heat. Cook the chicken until golden and fully cooked through. Remove from the pan and set aside. 4. In the same pan, add the onion and garlic. Stir and cook for a few minutes until soft and fragrant. 5. Pour in the heavy cream and let it gently simmer for a few minutes to develop flavor. 6. Add 2 tbsp grated Parmesan and 1 tbsp mozzarella. Stir until melted and smooth. 7. Meanwhile, cook the pasta in salted water until al dente. 8. Add the broccoli to the sauce and cook for about 3 minutes until slightly tender. 9. Add the sun-dried tomatoes and cooked chicken back to the pan. Stir well to combine. 10. If needed, add about 3 tbsp of pasta water to loosen the sauce and make it silkier. 11. Add the drained pasta to the sauce. Toss everything together and let it simmer for a few minutes so the sauce thickens and coats the pasta evenly. 12.
