Two chip chocolate chip muffins Ingredients 1/2 cup (115g) salted melted butter 2 1/2 cups ( 312g ) all purpose flour 3/4 cup (150g) granulated sugar 1/4 cup (55g) brown sugar 2 tbsp (30g) neutral oil 1 tbsp (15g) vanilla bean paste or vanilla extract 1/4 cup (60g) sour cream or greek yogurt, room temp 1 cup (240 ml) buttermilk, room temp 2 tsp (10g) baking powder 1/2 tsp (2.5g) baking soda 1/2 cup (85g) semi sweet chocolate chips 1/2 cup (85g) of milk chocolate chips 1 tsp (5g) espresso powder (dissolved in 3 tbsp hot water) 2 eggs room temp Instructions: Pre heat the oven to 425 F. Make wet batter: In a bowl add melted butter, along with granulated sugar and brown sugar. Add oil. Mix well for 2-3 min. Crack in the eggs and whisk for 3-4 min until pale in color. Add vanilla bean paste . Mix until well combined. Add buttermilk, sour cream and espresso. Whisk for additional 2-3 min and set aside Make dry batter: In a separate bowl combine all purpose flour, baking soda, baking powder. Mix together until well combined. Add the dry batter into the wet batter. Add chocolate chips and mix until just combined. Do not over mix the batter at this point. Let the batter sit untouched at room temp for 30 min. Line muffins tins with parchment paper. Divide the batter into the muffin pan equally. Top with more chocolate chips if desired. Bake the muffins for 5 minutes at 425F. After 5 min do not open the door of the oven and reduce the temperature to 375 F, bake for additional 15 min. Check the muffins with the toothpick if it comes out clean they are ready.
