There are restaurants in Paris that don’t have wait lists of any kind and only offer reservations 90 days in advance and you have to call exactly when they open to get your table 90 days from now and even then it might book up before they answer you.

Not opened from 200 years it’s been bought and renovated 3 years ago by a famous American group … basically a « French » restaurant for wealthy tourists 😅
