Cool comparison. I bake sourdough at least once a week with starter, but keep dried rapid rise yeast in the cupboard also. My fav French bread recipe is an old Rombauer&Becker with milk, fat, sugar, and yeast. Definitely not sourdough, definitely eat a whole loaf in an afternoon. 😋

You can add very little (<0.1%) commercial yeast to traditional sourdough and you have all the health, flavor, characteristics of regular sourdough but a way more reliable fermentation curve. In the industry it’s called “spiking the dough”. Starter behaves differently day to day even if you’re extremely consistent in feeding. It’s literally changing with the ambient environment. Yeast smooths out the variance so you can make more repeatable bread and at those tiny levels you sacrifice no flavor, texture and no health benefits

I do "faux sourdough": adding commercial yeast in very small amounts, and doing 6-24 hour proofing (depending on if I could proof)... much more predictable than sourdough, no feeding a starter, some of the health benefits of a long fermentation, a bubbly crisp crust that competes well, and a much easier learning curve. None of the sourdough tang (which I'm totally okay with).

Waaayyy off topic but… your high cheekbones are everything! I have high cheekbones too, but yours are more prominent. 😍 LOL my cousin used to always say she loved my high cheekbones and wished she had them and I’d think “whyyy? 🤔”. I didn’t even notice I had them until the first time she pointed it out but now I see it in myself and others and I see exactly what she meant now. 😆 Stunning!

Hi! I bulk fermented and when I dumped it out it came out goopy! Do you know why? I bulk fermented for 6 hours in a bread box at 70 degrees.

That makes sense, I was in the grocery store I saw sourdough bread but it was much softer but at the same time kinda hard like stale. I was reading the ingredients it had other things in it.
