I cut them thin and bake them with olive oil and seasoning and I take papaya enzymes to help because yes the gas is horrendous!

@Rastagecko1970:I had an awesome variety years ago called Clearwater. The tubers were large with almost no knobs. Unfortunately the deer and groundhogs in my yard ate every single one of them and I've never been able to grow any more.
