1. Some dried herbs have a noticeably different flavor to fresh. And might be desired. Some recipes literally require dried herbs.

Fresh herbs are not readily available to me, if they are, they tend to be shotty quality. Very expensive too. I’ve tried freeze dried herbs, but definitely prefer fresh.

Fresh herbs for sure, but fresh dried oregano hits different, basil brings out way more of the anise aroma from it without being too pungent or peppery. Certain applications towards certain results

I 100% agree! Fresh herbs are far superior. As a matter of fact, irreplaceable in most dishes. You gotta have fresh basil in tomato sauce!

For me as a home cook it depends on the herb. Dried basil is basically sawdust. Dried herbes de provence tend to work dang well even if not quite as vibrant as the fresh version (but good luck finding all 5 herbs fresh in a grocery store and also that’d be $20+)

in the case of rosemary and oregano I find the dry versions are better. All the rest I use the fresh versions.

Sorry, you are wrong here and it is bad for you to teach this. Many people cooking at home do not have access to fresh herbs and for many who do it is in very expensive little containers. I will agree that fresh herbs are usually better. Dried parsley is flavorless, rosemary is pretty much the same. But dried thyme and oregano are quite good. Even dried basil is bringing some flavor. Tarragon is also good, you need so little of it and it can really make a difference. Not every home cook has access to the ingredients that are available to a restaurant chef.
