You push the mashed potatoes through a sieve to get that silky smooth texture. I thinks that is in the original recipe as well.

You should peel them first. Cooking them with the skins on can change the texture and make them slightly more bitter.

I put loads of white pepper and salt too with a tonne of butter, not as much milk though and I do make a wonderful mash. So I’ve been told. Freshly ground white pepper though. It’s Devine.

If you’re in the UK, Tesco Finest range, look for the potato called ‘Georgina’. It’s normally written on the front. These are really yellow in colour when peeled and make superb mash. Cooking them in jackets in the oven, then scraping out and making mash was also really really good!

I use crème gold potato’s (Australia) and I don’t do any of that. Peel, rinse for starch removal, boil, drain, put back on stove for a few minutes to dry, add a shitload of butter, some salt, some milk, mix with electric mixer. Perfect every time.
