@prairie.creek.hom: I love to can any potatoes I have speared (and cannot cold store) when digging them up! 1. Peel and cut your fresh potatoes into 1 inch pieces. Add them to a water and lemon solution to prevent browning. I did about 1/4 cup lemon juice to 2 quarts of water. Drain. 2. Once all are cut, boil them for 2 minutes in a large stock pot and drain. Hot pack them into jars, add 1 tsp. Canning salt to each quart and fill with hot water to 1 inch headspace. 3. Pop bubbles and wipe rims clean, add lids and band to fingertip tightness. 4. Pressure can at 10 PSI at my elevation for 40 minutes, following your canners instructions (I have an All American). . . . #canning #garden #potatoes #homemade #growyourown
