@createaplatewithdina: Cabbage, Sausage & Bean Soup | Part 11 of My Sunday Soup Series ✨ Ingredients • 10 slices bacon, chopped • 13.5 oz smoked sausage, sliced • 1 medium onion, diced • 2 medium carrots, halved lengthwise & sliced • 3 celery stalks, sliced • 5 garlic cloves, minced • 1–2 tbsp tomato paste • 1 can cannellini beans, drained & rinsed • 1 can navy or great northern beans, drained & rinsed • 6 cups chicken broth • 1½ tsp salt, or to taste • ½ tsp black pepper • 1 tsp dried thyme • ½ medium green cabbage, thinly sliced • Fresh parsley, for finishing How to Make It 1. Cook bacon in a large pot until crispy (7–8 min). Remove and set aside. 2. Brown sausage in the same pot (about 5 min). Remove and set aside. 3. Leave ~1 tbsp fat in pot. Add onion, carrots, and celery; sauté 5 min. 4. Stir in tomato paste; cook 2 min. Add garlic and cook 30 sec. 5. Add broth, salt, pepper, thyme, and both beans. Bring to a simmer. 6. Add cabbage and simmer uncovered 15–20 min until tender. 7. Blend a small portion of the soup to thicken (keep it chunky). 8. Stir bacon and sausage back in, simmer 5 min, finish with parsley.
