Double Crust Curd 🥧 📕Recipe here: ❂ Ingredients: For the Filling: 550 Cottage Cheese (farmer cheese) 150g. Sugar 1 Tsp Vanilla 100g. Sour Cream 5 Eggs 40g. Corn Stratch For the Curd: 300g. Flour 180g. Butter Pinch of Salt 70g Cacao Powder 100g. Sugar ❂ Cooking process: - Grind cottage cheese through a sieve, add sugar, corn starch, vanilla, sour cream, eggs and mix well until smooth. - Into the mixer bowl add flour, cacao, sugar, butter, salt and beat until crumbly(do not over mix because it will stop being crumbly). - Cover the baking dish with baking paper, pour out ⅔ of the sand crumbs, smooth with a spatula and make small sides from the crumbs with your hands. - Pour the prepared cheese mass on top. - Then sprinkle the remaining crumbs in an even layer on the curd mass, so the cheesecake will turn out airy and crispy, gently level the surface with a spoon. - Bake the cheesecake at 380F for 50 minutes. - Remove from oven and cool in a cold place for 1-2 hours. This dessert is very delicate and not over sweetened with a high protein.
