This is the BEST dessert I’ve EVER made, and I say it without hesitation. A peach is already a little extravagant. It arrives wearing velvet, holding all that sunlight beneath its skin, asking for almost nothing but a napkin and a willing chin. Most days, that is enough. But every now and then, even a peach wants to travel. That is how this dish began, not with a map, but with an aroma. Full recipe in my Substack at Lenorenolanryan 4 ripe peaches, halved and pitted 2 tablespoons melted butter 2 tablespoons honey 2 tablespoons light brown sugar 1 teaspoon mild yellow curry powder Pinch of salt Zest of 1 orange Tamarind Caramel 1/2 cup tamarind elixir (see recipe in When Mango Meets Masala Cocktail) ¼ cup honey 2 tablespoons light brown sugar 2 tablespoons butter Pinch of salt Honey Labneh 1 cup labneh 2 tablespoons honey 1 teaspoon vanilla extract Finishing Crumbled amaretti cookies Chopped pistachios Fresh mint leaves Pomegranate seeds Drizzle of Extra Virgin Olive Oil Heat the oven to 350°F. Combine the melted butter, honey, brown sugar, curry powder, salt, and orange zest. Smear the mixture generously over the cut sides of the peaches. Arrange the peaches cut-side up in a baking dish and roast for 20–25 minutes, until tender, burnished, and beginning to caramelize. Meanwhile, combine the tamarind elixir, honey, brown sugar, butter, and salt in a small saucepan. Simmer for 4–5 minutes, until glossy and slightly thickened. Mix the labneh with the honey and vanilla. Smear the honey labneh across a serving plate, arrange the warm roasted peaches on top, and spoon over the tamarind caramel. Finish with amaretti crumble, pistachios, fresh mint, and pomegranate jewels. Drizzle with olive oil. Enjoy! #peachdessert #indiandessert #sweetandsavory #DessertRecipes #labneh
