@life.of.issy.fam: Ingredients: • 2 cups flour • ¾ cup sugar • 1 tsp baking powder, ½ tsp baking soda • 1½ tsp cinnamon, pinch nutmeg & salt • ¾ cup oil, 4–5 eggs, 1 tsp vanilla • 2–2½ cups grated carrot • Optional: ½ cup nuts or raisins Method: 1. Preheat oven 160°C, grease pans. 2. Mix dry ingredients. Blend wet ingredients. Fold wet into dry, then add carrots (and nuts/raisins). 3. Fill pans 2/3 full. Bake: 6” → 50–55 min, 4” → 30–35 min. 4. Cool completely.
