My signature yeast roti recipe ~~SAVE NOW~~ The one my friends and family always ask me to make! This roti is incredibly soft, fluffy, and stays deliciously tender. It’s perfect with any curry, to be wrapped with, or any Sambol and once you try this method, you’ll understand why it’s a favourite in my home. 😍 These can be frozen too!  Super Soft Yeast Roti Recipe 🫓 Dry ingredients: • 600g all-purpose flour • 1 tbsp sugar • 2 tbsp milk powder • 7g instant yeast • 1 tsp salt Wet ingredients: • ½ cup yoghurt • 4 tbsp melted butter • 1 tbsp sunflower/vegetable/olive oil • 1 egg (optional) • Warm water as needed approximately ¾–1 cup warm water (add gradually as needed) Method: 1. Mix all the dry ingredients together. Add the wet ingredients and knead into a soft dough. 2. Cover and let it rest for about 1 hour, or until the dough doubles in size. 3. Divide the dough into balls. I use 100g dough balls, which makes around 10 large rotis. 4. Heat a pan and cook the rotis on both sides, brushing melted butter on each side while cooking. 5. As soon as the rotis come off the pan, cover them with foil to keep them soft until serving. Enjoy these fluffy rotis with your favourite curry! ❤️ To freeze: ❄️ Let the rotis cool completely. Wrap each roti individually with cling wrap and stack them together. Place them in a ziplock bag and freeze.
