@sugarspiceddreams: fluffy strawberry cinnamon rolls, my first time making them they were actually so good !! perfect for valentine’s day 💝 strawberry reduction (make first) 1 ½ cups chopped fresh strawberries 2–3 tbsp sugar 1 tsp lemon juice 1-2 tbsp cornstarch to thicken( as needed ) cook strawberries, sugar, and lemon juice over medium heat, mashing as they soften, until reduced into a very thick jam-like paste. ( add cornstarch if it’s not thickening as well ) . let cool completely. you’ll use half for the filling and half for the frosting. dough ¾ cup warm milk (180 ml) ¼ cup melted butter (57 g) ¼ cup sugar (50 g) 2 ¼ tsp yeast (7 g) 1 large egg + 1 egg yolk, room temp 3–3 ¼ cups flour (360–390 g) ¼ tsp salt (1 g) mix the warm milk with sugar and yeast and let sit 5 minutes until foamy. add melted butter and eggs and mix well. add flour a cup at a time along with salt, mixing between additions. knead until smooth and elastic. the dough should be slightly sticky. instead of adding more flour, lightly oil your hands and work surface with olive oil and knead. slap the dough against the counter to build structure ( i usually did this if the dough got too sticky while kneading ) place dough in a greased bowl, cover, and let rise in a warm area for 1–1½ hours until doubled. roll out once risen. strawberry cinnamon filling ¼ cup softened butter (57 g) ⅔ cup brown sugar (about 160 g) ½ of the cooled strawberry reduction 2–3 tsp cinnamon (optional but rly good) pinch of salt mix everything into a thick paste, spread evenly over dough, leaving a small border at the edge so it doesn’t leak when rolling. slice and roll tightly ( i did 8), and place into pan. ( i added parchment paper to keep the moisture in ) cover and let rise 30 minutes. pour heavy cream over the tops and bake at 350°F for 20–25 minutes, tenting with foil if browning too fast. bake until centers are set. ( baking time may vary with pan type & oven ) strawberry cream cheese frosting 2 tbsp softened butter (28 g) 4 oz cream cheese, room temp (113 g) ½ of the strawberry reduction 1 tsp vanilla bean paste 1–1 ½ cups powdered sugar (120–180 g) whip butter and cream cheese until fluffy. add vanilla, strawberry reduction, and powdered sugar and whip until smooth and spreadable. if needed, thin with a splash of heavy cream or milk.
