Hey! I’m a Dietitian and want to clarify that resistant starch is still a carbohydrate, it simply resists digestion in the small intestine and ferments in the large intestine, which can prevent large spikes in glucose. It also helps to feed the good bacteria in your gut! 😁

Not me, mouth agape, learning about this as I’ve been in my sweet potato era.
😳 "The longer and cooler the temperature, the more these resistant starch structures can form and stabilize. Refrigerating for at least 8 to 12 hours, or ideally overnight (24 hours), significantly increases the resistant starch content compared to just partial cooling."

If you want to make things even simpler, you can buy frozen sweet potatoes, potatoes, or rice! This accomplishes what violet says and makes the meal even more accessible for busy folks!! I’m sure you could prep and freeze your own too

Whoa, I didn’t know this about cooling them. Does the actual fiber content change or is it just a change in how you digest them?

Is refrigeration enough to convert the starch? I was under the impression it had to be frozen

Fiber is a type of carbohydrate. Even if you do that with the sweet potato, it still has starch and will be broken down into glucose. Not really necessary to do that when you are adding a lot of fiber with your meal.
