@mydarr_: Mango Sticky Rice I’m Thai, and my mom taught me the authentic way to make mango sticky rice, but I’m too stubborn to follow all her steps (who has 8 hours to soak rice? 😂). So I created my own easy, lazy shortcut that keeps the real Thai taste and flavor, takes less than 45 minutes, and honestly turned out amazing! ⸻ Ingredients Sticky Rice 1 cups sticky rice 1 cups water Coconut Milk Mixture 1 cup full fat coconut milk 1/3 cup sugar 1 tsp salt 2 tbsp purple sweet potato powder (for natural color, antioxidants, and extra fiber) Coconut Topping Sauce 1/2 cup coconut milk 2 tbsp sugar 1/2 tsp salt 1 tsp cornstarch For Serving 1-2 ripe mangoes Toasted white sesame seeds ⸻ Instructions Prep the rice → Rinse sticky rice 3–4 times until the water is almost clear. Cook the rice → Combine rice and water. Cook on High Pressure for 5 minutes, then let the pressure naturally release for 5-10 minutes. Coconut milk mixture → Warm coconut milk, sugar, salt and purple sweet potato powder. Pour over hot rice, fold gently, let absorb 20–30 min. Coconut topping → Heat coconut milk, sugar, and salt over medium-low heat. Stir in the cornstarch slurry and cook until lightly thickened and silky. Assemble → Scoop sticky rice on the plate, top with coconut sauce, add sliced mango, and finish with toasted sesame seeds. ⸻ #MangoStickyRice #DessertGoals #desserts #mango #creatorsearchinsights
