Bring Steak to Room Temperature Time: 30-60 minutes Remove the steak from the fridge and let it rest at room temperature. This helps it cook evenly. 2. Season the Steak Time: 1 minute Pat the steak dry with paper towels. Season generously with salt and black pepper or steak seasoning on both sides. 3. Preheat the Pan Time: 3–5 minutes Heat your stainless steal pan over high heat until very hot. Add 1 tablespoon of oil with a high smoke point. I use Beef Tallow or Ghee. 4. Sear the First Side Time: 2–4 minutes Place the steak in the pan. Do not move it. • Rare: 2 minutes • Medium-rare: 3 minutes • Medium: 4 minutes A deep brown crust should form. 5. Flip and Sear the Second Side Time: 2–4 minutes Flip the steak and cook for the same time as the first side. 6. Add Butter, Garlic & Herbs to Baste Time: 1–2 minutes Lower heat to medium. Add butter, garlic, and herbs. Spoon melted butter over the steak continuously. 7. Check Doneness (Internal Temperature) • Rare: 49–52°C • Medium-rare: 54–57°C • Medium: 60–63°C • Medium-well: 65–68°C 8. Rest the Steak Time: 5 minutes Remove steak from pan and let it rest.
