@sweetconfection: This is my recipe Hot Chocolate S’mores Sourdough Cookies the cookie is perfectly soft and chewy and the gooey marshmallow with chocolate on top is just pure happiness in every bite Ingredients • 250 g all-purpose flour • 30 g unsweetened cocoa powder • ½ tsp baking soda • ½ tsp salt • (Optional) ½ tsp cinnamon • 1 cup browned butter • 1 cup brown sugar • ¾ cup granulated sugar (or ½ cup sugar + 1–2 tbsp honey) • 1 large egg + 1 egg yolk • 1 tbsp vanilla extract • 1 tbsp heavy cream or 2 tbsp yogurt • 110 g sourdough discard • 2 cups chocolate chips (half milk chocolate, half semi-sweet) • Medium or large marshmallows, cut in half • Whole graham crackers (1 per cookie) Instructions 1. In a bowl, whisk together the flour, cocoa powder, baking soda, salt, and cinnamon (if using). Set aside. 2. In a large bowl, mix the browned butter with the brown sugar and granulated sugar until well combined. 3. Add the egg, egg yolk, vanilla extract, and heavy cream or yogurt. 4. Mix in the sourdough discard until incorporated. 5. Add the dry ingredients and mix just until a dough forms. 6. Gently fold in the chocolate chips. 7. Place one whole graham cracker on the baking sheet. 8. Place one marshmallow (or half) in the center of the graham cracker. 9. Take 70–90 g of cookie dough, slightly flatten it, and place it over the marshmallow, lightly sealing the edges to cover it. 10. Repeat with the remaining cookies. 11. Bake at 180°C / 350°F for 9–12 minutes. 12. At minute 8–9, carefully open the oven and tap the baking sheet to create a crackled surface. 13. For toasted marshmallows on top, add mini marshmallows at minute 9 and bake for 1–2 more minutes. 14.
