Mix water, yeast, honey, and flour. Cover 10 min. 2. Add oil and salt, mix. Cover 10 min. 3. Fold in olives and thyme, cover and refrigerate overnight. 4. Next day, rest at room temp 1 hour. 5. Gently turn out, don’t deflate, fold into 4, divide into 4. 6. Shape baguettes, dust with flour, cover 30 min. 7. Score, add a few olive oil drops in the cuts. 8. Bake in a very hot oven with steam 10 min, then reduce to 390°F / 200°C and bake 10 more min. #baguette #bread #baking #breadtok #dough
