Get a couple paper towels wet and wrap the tortillas in them and warm them up for like 30-40 seconds works everytime

try using the white cheese next time. but yes this is birria here in San Antonio Texas. so good especially when you dip it in the juices you used to cook the roast in. topped with cilantro and onions in the broth. soooo good

Microwave the tortillas for like 7 seconds in the microwave! Then when you put them in the over, put another sheet pan on top of them for the first half of baking to help them hold their shape/get crisped up🫶🏼
