choice is the lower grade which makes it more affordable than the select prime and so on. In most cases Heb has their own farmers they deal with when it comes to all of their products. I only know because I worked in the meat market for 3 years for HEB and learned alot while there.

If it's that cheap, go up to the meat counter, and ask for a cryo-vac whole rib primal. It'll be able 20lbs, and give you a lot better bang for your buck. It could even be cheaper per pound.
