There's also Campus Galli in Germany, trying to reproduce the medieval plan of an Abbey, found in St. Gallen, Switzerland.

Guédelon reproduces most core 13th‑century castle techniques (quarrying, hand‑cut masonry, lime mortars, timber centering, treadwheel cranes), but applies them more slowly, systematically, and under modern safety constraints than a medieval chantier would have. The project is less an exact time capsule than a controlled laboratory: the “how” of the techniques is very close to the 13th century, while the “why, how fast, and under what discipline” is markedly contemporary.
