I worked at a brunch place that had the prep cook make it and make just enough for 2 orders at a time. the wait was long on a Benedict but the servers explained that to customers

Hang on to those food safety standards. You can bet the current health leaders who have no education or experience in health sciences will lose the proven safety standards to give restaurants more "legal" profit. Know the politics of the places you eat unless you're okay with food poisoning.
