Sure if you hold a chicken under the faucet and turn the water on it will splash. If you wash, different from rinsing, the chicken is placed in a bowl with water, salt, vinegar, lime, etc. There is no splashing involved. But like you said, it's your preference. I wash, not rinse!

I wash it in a bowl a few times, then I wash the whole sink and counter with desinfectante. Never had a problem.

I do rinse and pat it dry. Sometimes I cut away excess fat on certain pieces. I always rinse if I am cutting g up a whole chickenHOWEVER.
