The laser doesn’t need to shoot across the curve. The guidance laser can be on the missile itself. The target can be acquired by another plane, drone, or satellite. Once locked, the missile follows the laser guidance, factoring in both curvature and distance.

You really do not understand what distance to the horizon means. Did you know that 10,000 feet up the horizon is 122.5 miles away. If the enemy plane or rocket was 10 feet up or sitting on a beach and it was 100 miles away your radar could easily detect it. From 5,000 feet up the horizon is 86.6 miles away.
