HIDDEN VEGGIE PASTA One of the best ways to get your micronutrients and fiber in if you’re a picky eater, sick of veggies, or just want an easy staple meal to add to your rotation. Ingredients: 1 box of pasta of choice I used brown rice tagliatelle 2 red bell peppers 3 large carrots 2 large tomatoes 1 pint cherry tomatoes 1/2 a yellow onion 1 head of garlic, with top cut off 1 tbsp olive oil Salt and pepper 1 tsp Italian seasoning 1/2 cup unsweetened almond milk 1/3 cup Parmesan cheese (can use nutritional yeast if dairy free) Instructions: 1. Preheat oven to 450 F and line a baking sheet with parchment paper. 2. Prep the veggies and add them to the baking sheet. Drizzle with olive oil, salt and pepper, and Italian seasoning. Bake for 30 minutes or until tender. 3. While veggies cook, prep pasta according to package instructions. Drain pasta and add it back to the pasta pot. 4. When veggies are done add them to a high speed blender along with cheese, and almond milk blend until you reach a thick creamy consistency 5. Add sauce to the pot with pasta and heat over low for 2 minutes, stirring until everything is well combined. Rotisserie chicken scoopable salad I’m a firm believer that eating your veggies in dip form is superior Ingredients 1 rotisserie chicken, chopped into bite sized pieces 1 can corn 1 can black beans 1 orange bell pepper 1 yellow bell pepper 1 red bell peppers 1 cucumber 1/2 a red onion 1/2 cup fresh chopped parsley 2 avocados 2/3 cup low fat feta cheese 3 tbsp light mayo Juice of 1 lime Salt to taste 1 tsp garlic powder 1/2 tsp chili powder Instructions 1. Prep all your veggies by chopping into small pieces, highly recommend a veggie chopper. 2. Add corn, black beans, chopped veggies, rotisserie chicken, parsley, avocado, and feta to a large bowl. Then add mayo, lime, salt, garlic powder, and chili powder. Toss until everything is well combined, adjust salt according to preference. 3. Enjoy on its own, with tortilla chips, on top of rice cakes, the options are endless. 4.
