Can anyone tell me why the bottoms of my rolls got super crunchy with the filling when they cooked. Like a “crust” like bottom

Just made these! Excited to try them but have to wait for them to cool down. I struggled because I have to use margarine instead of butter and it was melting so fast( dairy allergy) will make a powdered sugar icing for them and try them out!

I started the dough for these tonight, Will these be okay in the fridge until Sunday morning for Easter? I planned on filling and shaping tonight and taking them out Sunday morning early to allow them to rise

Did the type of flour matter? Bread flour vs all purpose flour?

70% rise is the goal? And can I shape and put in a dish and in the fridge until the next morning? And then rise and bake

Making this dough tonight! When you say shape it before the fridge— do you mean shape it into a normal rising sourdough ball in a bowl? Then let them finish rising in the morning, stretch into a rectangle, and add filling. Or do I add filling and “shape” them into rolls tonight- and just let the rolls rise out of the fridge in the morning? Thank you for this recipe!
