If there was ever a person who needed their own cooking show, it’s Aunt Kathy. Y’all, she had on her Wizard of Oz apron, stepped into that kitchen like she’d been hosting a cooking show for 30 years, and wasn’t the least bit nervous. Meanwhile, I was just standing there being impressed. 😂 She is so organized, so calm, and she absolutely knows what she’s doing. Every little trick, every little shortcut, every little bit of kitchen wisdom just rolled right out of her. I was so proud of her. And let me tell you… this microwave peanut brittle turned out AMAZING. We had planned to make pecan brittle, too, but decided to wait until we could get some fresher pecans. The good news is this recipe works for either peanuts or pecans, and it’s so easy. One of my favorite tips she shared was buttering the spoon, knife, and even the plate she used while working with the brittle. Nothing stuck, and it made cleanup so much easier. ⚠️ Just be careful because this mixture gets VERY hot. 🥜 MICROWAVE PEANUT OR PECAN BRITTLE Ingredients: • 1 cup sugar • ½ cup light corn syrup • ¼ teaspoon salt • 1½ cups Planters cocktail peanuts OR toasted pecans • 1 tablespoon softened butter • 1 tablespoon vanilla • 1 tablespoon baking soda You’ll also need: • 8-cup glass measuring cup or large glass bowl • Buttered cookie sheet • Buttered spoon • Buttered knife • Buttered plate Directions: 1. Combine sugar, corn syrup, and salt in a large glass measuring cup or bowl. Mix well. 2. Microwave for 5 minutes total. Aunt Kathy microwaves 2½ minutes, stirs, then microwaves another 2½ minutes. 3. For peanut brittle:     Add peanuts and stir well. Microwave for 3 more minutes, stirring every minute, until light brown. 1. For pecan brittle:     Add toasted pecans and microwave for about 2 minutes total, stirring every 30 seconds. Watch closely because pecans can burn quickly depending on your microwave. 1. Remove from microwave and quickly stir in vanilla, softened butter, and baking soda. 2. Immediately pour onto a buttered cookie sheet. 3. Don’t spread it with a spatula or knife. Instead, gently tilt the cookie sheet and let the brittle settle on its own. This keeps the air in the mixture, making it lighter and easier to bite instead of hard as a rock.
