@prairie.creek.hom: My garden salsa recipe 🍅 🌶️ 🫑 🧅 Ingredients: 30 medium large tomatoes 1 white onion 1 red onion 5 jalapeño peppers 2 green bell peppers 5-8 green onions 3 Thai chili peppers 8 cloves minced garlic 2 large handfuls of cilantro 1 cup white vinegar 4 TBSP lime juice Directions: 1. Wash your tomatoes and core them. Slice them in half and lay cut side down on a baking sheet and broil in the oven until the skins wrinkle. Remove from the oven and let cool until you can handle them. Remove skins and chop tomatoes. 2. Chop the remaining ingredients in a blender or food processor. Add all ingredients to a large stock pot and bring to a boil. Lower the heat and let simmer for 30 minutes or so to thicken the salsa a bit. 3. At this point you can leave your salsa chunky, or with an immersion blender blend it to a smooth consistency. Ladle into hot jars to 1/2 inch head space. Wipe rims, pop bubbles and lid and band to fingertip tightness. Add to your canner and process for 20 minutes. 4. Turn off the heat, let jars sit in the water for 5 minutes more before removing to a toweled counter. Let sit 12 hours, remove bands and check the seals. Label and store!
