This honey butter version is ridiculously simple but so good it feels like a little dessert and snack all in one 🤭 I used Japanese sweet potatoes here because they get extra fluffy and creamy, but honestly any kind works. Just adjust the honey and butter to your taste. That Korean honey-butter combo (like those iconic honey butter chips) is popular for a reason, and it pairs so perfectly with warm roasted sweet potatoes. How I made it: Air fry sweet potatoes at 375°F for 30 min until soft. Split open, add a chunk of salted butter, a drizzle of honey, and mozzarella, then air fry again at 400°F for 5–8 min until the cheese melts and gets lightly golden. Finish with a little dried parsley and extra honey if you want.
