Alle Zutaten für ca. 10 Minuten verkneten 2. Teig abgedeckt 30 Minuten bei Raumtemperatur gehen lassen 3. Über Nacht in den Kühlschrank stellen 4. Am nächsten Tag den Teig In 8 gleich große Stücke teilen und zu runden Brötchen formen. 5. Die Teiglinge ohne sie abzudecken 30–60 Minuten ruhen lassen. 6. Anschließend die Brötchen abdecken und weitere 15–30 Minuten ruhen lassen. Dadurch kann die Oberfläche leicht abtrocknen und bildet eine stabile Haut. 7. Laugen: Dafür die Lauge in Wasser geben (nicht andersrum!) und die Brötchen für 5 Sekunden in die Lauge tauchen, mit Salz bestreuen und die Brötchen einschneiden 8.
