Costco just dropped their new marshmallow crispy cookies this month… and of course I had to try making them at home 👀🍪 Spoiler: they came out just like Costco’s — chewy, gooey, crispy-edged, and full of marshmallows + Rice Krispies. Honestly… they might even be BETTER because they’re homemade 🤭 Save this recipe ⬇️ because you NEED to try these! ⸻ ✨ Costco-Style Marshmallow Crispy Cookies (Homemade Dupe) ✨ Ingredients • 7 Tbsp unsalted butter (browned → ~85 g) • 2 Tbsp shortening (room temp) • ⅓ cup light brown sugar, packed • ⅓ cup granulated sugar • 1 large egg (room temp) • 1 egg yolk (room temp) • 1 tsp vanilla extract • 1 ¾ cup all-purpose flour • ½ tsp cornstarch • ½ tsp baking soda • ¼ tsp baking powder • ½ tsp kosher salt • 1 ½ Tbsp light corn syrup • ⅔ cup mini marshmallows (+ more for topping) • 1 ½ cup Rice Krispies cereal Instructions 1. Brown the butter until nutty + golden. Cool until thickened. 2. Beat browned butter, shortening, and sugars until fluffy. 3. Mix in corn syrup, egg, yolk, and vanilla. 4. Whisk flour, cornstarch, baking soda, baking powder, and salt. Add to wet mixture. 5. Fold in marshmallows + Rice Krispies. 6. Chill dough 1 hr. 7. Scoop 3 Tbsp portions. Bake at 350°F (175°C) for 13–15 min. 8. While hot, swirl with a cookie cutter for perfect shape + press on a few marshmallow halves for that Costco look. 9.
