These no-bake squares are gluten-free, dairy-free, and refined sugar-free—and the perfect way to use up old rice cakes or rice cereal you know you won’t be reaching for… 😉 Peanut Butter Layer •2 cups crispy rice cereal or quinoa pops (or crushed rice cakes) •½ cup natural peanut butter •¼ cup pure maple syrup, room temperature •1 tbsp coconut oil, melted Chocolate Topping •6 oz dark or semi-sweet chocolate (I use dairy free and refined sugar free chocolate) •2–3 tsp coconut oil Instructions 1. In a bowl mix the peanut butter, maple syrup, and melted coconut oil until smooth. Add the rice cereal, quinoa pops, or crushed rice cakes and stir until fully combined. 2. Press the mixture evenly into a parchment-lined 7×11 or 8×8-pan and smooth the top. 3. Melt the chocolate with the remaining 2–3 teaspoons of coconut oil, stirring until smooth. 4. Pour the melted chocolate over the peanut butter layer and spread evenly. Optional: sprinkle with flaky sea salt. 5. Freeze for at least 1 hour, or until firm, then slice and enjoy! 6.
